I didn't make the tamarind drizzle, instead, I just drizzled over some Waitrose tamarind paste and sprinkled with the degi mirch chilli powder. However, I promise that once you dive into Indian cooking and realize just how simple it can be you will be seeking out new recipes to use up your bounty, just as I do. I ran them under the broiler and used homemade chaat masala, easily 2 teaspoons, was pleased with the result. According to publisher Bloomsbury, the cookbook has sold almost 100,000 copies to date, and was No 13 in the hardback nonfiction charts last week. Be warned this is one of those books where you start one recipe and realise you need two other recipes to complete it!

Mid-Morning snacks at 10:00 hrs more narrative for 11 pages, followed by 7 recipes for buns, puffs (pastry parcels), cheese sticks, biscuits and Masala Chai. It takes an awful lot of time to cook; more time, I think, than is outlined in the original recipe but it’s absolutely worth the effort. If you only have salted butter then reduce the amount of fine sea salt to 4g and taste before adding more. It uses a lot of oil and I did end up removing some of it after frying the garlic as it just seemed like too much. Dishoom restaurant in London’s version of aloo sabzi, a richly spiced vegetarian Indian potato curry that is made extra special with the addition of chickpeas and paneer.

Be sure to watch it - I didn't realise that the tomato-spice paste needs thinning with water (I don't think it matters too much if you skip this step) and I always wondered why my daal wasn't as intensely red as the picture in the book. I'll come back again with a straight oven roast for 15 minutes and skip the blanching - that will work for the broccoli but not sure about mange touts.

We have contacted and issued takedown notices to the relevant platforms and we conduct our own sweeps for piracy sites. But because the bar is set so high in London, Dishoom manages to be both really good and very accessible. This beautiful cookery book and its equally beautiful photography will transport you to Dishoom's most treasured corners of Bombay.Add 2 bay leaves, 6 green cardamom pods, 2 black cardamom pods and 2 cinnamon sticks to the saucepan with the oil and allow them to crackle for 1 minute, stirring regularly. It's not that difficult to prep these items fresh for each cook but if you are making a number of recipes from the book, it is convenient. Add 1 teaspoon of garam masala, 20g of sugar, 1 tablespoon of runny honey, 1 teaspoon of ground cumin, the crispy sliced garlic (fried earlier), 1 teaspoon of crushed fenugreek leaves and ½ teaspoon of fresh dill fronds to the saucepan. Zweigelt grapes (not unlike Pinot Noir) bring forth intense personality with shades of black cherry, acorn, hazelnut and spice. Then add the soy and cook for about 2 minutes, followed b the rest of the ingredients including the previously fried garlic. Replicating at home the experience of eating a meal or drinking a glass of wine that tastes delicious in a restaurant isn’t the same experience due to brain chemistry it’s all about the moment and occassion.

I liked the plain flour version much more - it resulted in a very nice, pliable dough that baked quickly into naan on my stove using a cast iron pan. My onions took almost three hours to caramelize to the state described in the recipe which was probably my mistake since I probably did not turn the heat up enough. The onion-tomato masala takes a while to make but it all pays off by adding a great slow-cooked flavor to this easy dish that comes together in the time it takes to cook the rice. I made it into a batch cocktail for Thanksgiving using sparkling wine in place of still water, garnished with Luxardo cherries and a long strip of orange zest — the flavor profile was perfect! Unlike the other comments I've always used the full amount of oil and not had any issues with it, the dish has never felt oily.
