Before they set off, we spoke to Charlotte Connelly, museum curator at the Scott Polar Institute, the research centre at the core of the epic Weddell Sea Expedition 2019, to learn more about the brutal challenges faced by the team, and precisely what they were hoping to achieve... Taste– With a generous strength of 47.3% this gives the spirit plenty of impact on the palate but in a mild warming manner. Harmonious and exhilarating. Whispers of gentle bonfire smoke slowly give way to spicy rich toffee, treacle and pecan nuts. These enticing flavours linger lovingly on the palate but are soon combined by a sensual, complex array of creme brulee, orange rind and freshly baked bread. It is a remarkable tapestry of tantalising taste sensations which truly rewards the palate.In the mouth: it echoes the nose closely: malty, with baked apples, cinnamon. Digestive biscuits. Some grapefruit acidity; and that barley-driven note mingles with light peat; and then gives way to vanilla and pears, and creamy buttermilk. Layers of honey follow, with gentle spices and a nice herbal note. The peat drifts about wonderfully – not dominating, just underscoring that malty core. Conclusions The polar regions are very expensive places to get to, so if you’re spending all that money you might as well go big. On this expedition there’s a huge range of experts, all doing their own bits of research. We’ve got biologists and glaciologists and geologists and meteorologists, and almost all the other ‘-ologists’, out there together, in a place that’s incredibly hard to access, working on things that could make a huge difference to their fields of research. Nose– Soft, elegant & refined. Delicate aromas of crushed apple, pear and fresh pineapple arouse the senses.
