About this deal

In collaboration with Tom Bray of Country Fire Kitchen, Olly cooked a feast for the Harlequins Rugby Team in June. Fire food fans from across the country regularly share the results of their cooks on social media using the produce they’ve purchased from Olly. LMC, together with other levy bodies from the UK, RoI and internationally contribute funding to this initiative. It was an absolutely class piece of meat, tender, deeply beefy in flavour and juicy with an addictive seam of crisp yellow fat.

It’s because it creates a way that we can deal with the beef in the most efficient and hygienic way and keep it at its very best. After three hours of braising and subsequent sauce reduction, the result was a pot of spoonably soft meat in an aromatic bone marrow-flecked gravy. LMC’s Industry Development Manager Colin Smith said, “All too often it is the negative stories about red meat that reach the headlines. The fact that meat is a product that is fibrous on various length scales including the nanometre scale, is for a major part responsible for this: the flavour components are only gradually released upon chewing, giving a good taste experience during the complete duration of mastication.Speaking about his beef appearing on the menu at the Beach House in Oxwich Bay, Olly said: “Within the first three months of us opening, we were on the menu of the Beach House. Meat Mattersconsiders the formation of the butcher guild and family firms, debates over royal policy and regulation, and the burgeoning role of consumerism and public health.

It is extremely encouraging to see the amount of work that goes on behind the scenes to accurately inform consumers and the media about the nutritional benefits of red meat. If you wish to see the food safety officer’s report on which this rating is based, you can request this from the local authority that carried out the inspection. Together with partners that span the entire vegetable protein chain, this basis will be used in this project to further developing shear cell technology for making the next generation consumer accepted meat analogues products with improved characteristics that can be produced more cost-effectively and will have reduced environmental impact compared to meat analogue products currently on the market.Flowing back and forth between Ethiopia to Israel, Meat Matters follows the many strands of significance surrounding cows and meat, ultimately forming a vibrant web of meaning at the heart of the Beta Israel community today. A rich, sensitive and nuanced ethnography of the interlaced practices, ideas, meanings, beliefs, and symbols of meat for the Beta Israel community. An online Gower butcher regularly sells out of his cuts of beef in minutes and has a legion of fans from across the UK, from Michelin-starred chefs to professional rugby players. Watts offers an excellent analysis of the complex relationship between the butchers and journeymen, guild members and governmental officials, husbands and wives, meat producers and consumers. In some cases, the local authority may decide that they cannot do so but will let you know this and explain why.
