One is to make 5 gallons (IMP) of pineapple wine. The required pineapples were trimmed and sliced over a couple of weeks and are waiting in the deep freeze for a free fermenter. Later today I shall use a newly fresh pineapple to start off a “Pineapple Liqueur” using brandy this year as opposed to Vodka

Those beautiful flavours of a sunny continental breakfast are brought to you in liquid form. The Slingsby Marmalade Gin combined with the bitter grapefruit and sweet syrup leave the taste of the continent dancing on your tongue. Oh - and if you’re wondering what to do with the leftover gin-soaked gooseberries… try them in your next crumble with ice cream! It’s a boozy delight!

So, the story goes that in 1571, William Slingsby realised that the spring water of Harrogate had healing properties. People from far and wide came to restore their body and soul in this spa town by bathing and drinking in the magical liquid. Put them in the freezer overnight, to begin to break down the fruit and release the sugars and juices. For some reason this post has been verrrrrrrrrrrry popular over the past week or so. Maybe it’s down to the hot weather in this corner of Europe. If you’ve given the recipe a go or tried someone else’s gooseberry gin, do tell us how you got on. Delivering a tangy, sharpness to a glass of Prosecco, Slingsby’s Gooseberry Gin is highly complementary of the fruity, light elderflower flavour. A delightful addition to any gathering or sunny evening at home. If you haven’t noticed how Gin mad the world has gone then you need to unbury your head from the sand. Gin is everywhere and people can’t get enough.

There is no hard and fast rule here for how long to leave your gin - we recommend at least a week or two, to allow the flavours to steep. Use a basic, cheap gin. The gooseberries will do the flavouring work, with the gin acting as a flavour carrier. One of our absolute favourite ways to make the most of them is to make a batch of delicious gooseberry gin.Fiona Nevile on Fiona’s traditional elderflower cordial recipe Hi Peta, Yes it does ferment a little = that is what you want. Simmering would kill the brew. Elderflower is synonymous with a sunny British picnic, so why not elevate it with the addition of Slingsby Gin. Share it with your friends and family and watch their faces light up inthe afternoon sun. The Slingsby Marmalade Gin is crafted using locally sourced botanicals from the Harrogate area. They complement the fruity apricot elements bringing a real sense of that promised marmalade flavour to a glass of Prosecco. If you have made ‘clean’ gooseberry gin - without any added sugar - then you’ll probably want to pair your homemade tipple with a mixer; we love an elderflower tonic water, as the delicate sweetness really complements the tart flavour of the gooseberries.

Build all ingredients in a large wine glass with cubed ice and mix well. Garnish with mint and an orange slice. We have added the optional addition of a little sugar in the recipe below to help counterbalance the tartness of the gooseberries, although this is not strictly necessary. With notes of cinnamon, dry spice, pear and apple and tastes of vanilla, stone fruits, pear and white pepper spice. This gin is deliciously light with a sweetened gooseberry flavour and has hints of pear that has its roots in a classic dry gin.
